Аннотация:This article examines traditional sweets, known as okashi and its special place in Japanese food culture and a unique in the context of global gastronomy. Its phenomenon of in the context of cultural transformations and the historical development of Japanese gastronomic traditions. It analyses the stages of formation of Japanese confectionery culture, the influence of Chinese and European culinary traditions, and the peculiarities of the adaptation of Western sweets in the Japanese cultural environment.
